Do you have a collection of cookie recipes that you LOVE?! If I have any weakness, it is definitely cookies! My favorite cookie is a soft, thick sugar cookie or a basic chocolate chip cookie (with milk chocolate chips). Nothing fancy…just sweet, soft goodness! So, during the season of sharing, we decided to pull together a few of our favorite cookie recipes:
Grandma’s Gingerbread Recipe
As you can see, this recipe is an antique. When I was a little girl, my mom (a professional cake decorator) made fantastic gingerbread houses. My favorite cake she made was a Victorian mansion with stained glass windows and a wrap-around porch. It was a masterpiece! She would always finish it off with tiny, fragile frosting icicles. We never ate the houses so I never realized how YUMMY the gingerbread was. So, now that I have kids, we make gingerbread men and decorate them. The smell of cinnamon, cloves, and nutmeg is scrumptious. To keep your gingerbread cookies soft, put them in an airtight container or plastic bag with a piece of bread.
I love a good, soft sugar cookie with rich, thick frosting and my kids LOVE to decorate them. I have been through a lot of recipes until I landed on this one. It doesn’t require refrigeration, but can be stored in the refrigerator until you are ready to use it. The trick is to not add too much flour during the mixing and add it only as needed while you cutting out shapes. There are plenty of frosting recipes out there, but I am a fan of the good ole store bought cream cheese variety!
Christopher “Kiss” Cookies
Several years ago, we joined the “Elf on the Shelf” club and “Christopher” joined our family. Every year he comes to visit on Dec 1st and moves around the house in funny hiding places. Our elf is not mean and does not create messes but he does make cookies! At least once during the month of December he produces a batch of Christmas “Kiss” cookies. My grandma used to make these and bring them over in a worn out Tupperware container for our enjoyment. They are the perfect blend of chocolate and peanut butter and have a soft, chewy texture.
Ok, so technically this is a recipe for a bar, not a cookie, but I had to share…they are the BOMB!! What isn’t to love? They have chocolate, caramel, oats, and….they are SUPER easy to make. You will impress your guests every time with these little morsels of perfection!
So…this is right up Tamara’s alley…the #NOBAKECOOKIE! No matter what time of the year, this little gem is one of her absolute favorites! (But instead of margarine she will always use REAL BUTTER which makes it TOTALLY delectable!!)
